Sunday swim
Yesterday was another beautiful day and a good time for a swim. This time we headed north, to Redcliffe. The Redcliffe settlement cove lagoon features a swimming lagoon, wading pools, bbq areas, bikeways picnic shelters, playgrounds, amenities and beach showers and about 56.5 kilometers away from our place.

Caught in the act!
I can hear someone asking for help... it was Ethan!! why? he can't get down from climbing up the top of pantry where the box of snack foods are sitting. He was told not to eat anymore biscuits and he have to wait for dinner to be served, but the little hungry monster can't wait and decided to get it on his own. He's getting clever!
He used the red little table as a ladder...
It is now locked using mum's apron:-)
The Baker
Prepared biscuits ready to put in the oven.

Raspberry melting moments recipe:
125g unsalted butter, softened
1/3 cup pure icing sugar, sifted
1/2 tsp vanilla essence
1 cup plain flour
2 tbsps custard powder
pure icing sugar, to serve
Raspberry filling;
1/4 tsp vanilla essence
60g unsalted butter, softened
3/4 c pure icing sugar
6 small frozen raspberries, thawed
->> Preheat oven to 160C. Line 2 baking trays with baking paper. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Sift flour and custard powder over butter mixture.
Stir with a wooden spoon until just combined and a soft dough forms.
->>Using 1 heaped teaspoon of cough per ball, make 30 balls. Place on prepared trays, leaving room for spreading. Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick. Bake for 15 to 20 minutes or until light golden. Cool on tray for 10 minutes. Transfer to a wire rack to cool completely.
->>Combine all filling ingredients and whisk until well combined.
->> spread the flat side of 1 biscuit with 1 tsp filling. Sandwich with 1 biscuit. Repeat with remaining biscuits and filling. Serve dusted with icing sugar.

Lazy days for school holiday

While Krystina is having a week school break, we managed to visit Dreamworld again (thanks to annual pass). After dropping Ethan off the childcare centre, we drove straight to Dreamworld. Krystina had a wonderful time enjoying nickelodeon central, wiggles world and watched slime time. She rode all the rides that's acceptable for her height and age. But she enjoyed the bump ride the most. Because we are an annual pass holder, we are allowed to enter the theme park a bit earlier thus enjoying the first one to get into the rides.
Although, it was sunny in the morning it was also bit cool and rain poured around noon, halting some rides and we have to seek shelter for about 1.5 hours in a restaurant. She entertained herself by designing her own ice cream sundae by topping different flavours and sprinkles.
